I bought the abacre system off a friend
but i'd like to erase all of there previous orders and menu

and also when I am about to give change why doesn't a window with the amount of change i should give to my customer come up?

You should use Delete Orders button located on Orders window.
You should manually delete each items.

But if you want to completely start from scratch you have to use arpos.mdb file instead of arpos-test.mdb file.
On Login window press More button and charge from arpos-test.mdb into arpos.mdb
